A dark Wulong tea (Rock Tea) Jin Mu Dan, “Golden Peony” in Chinese (金牡丹), is a traditional rock tea grown on a rocky yellow soil rich of minerals, in a city named Xia Mei in Wuyi Mountains, Fujian province (Wuyi Shan).
The Tea Research Institute of Fujian Academy of Agricultural Sciences has bred this cultivar by an artificial hybridization method from 1978 to 1999. It was bred from Tie Guan Yin as the female parent and Huang Yan 黄棪as the male parent.
The dry leaves of Jin Mu Dan are rolled tightly. It has a fresh woody aroma followed by floral and honey fragrance with slightly bitter-sweet taste. The liquor texture is sweet and mellow and the liquid is gold and translucent. It is a classic medium-light roast Yancha.
An intense tea with a lot of presence, rich in Theine and with notes of ripe fruit.
An everyday tea with a warming tendency and a fruity finish. Recommended for drinking during the cold seasons, from Autumn till Spring.

Instructions
Infuse a portion of 4-8g tea leaves in boiled water 95-100°c, for 5-10 seconds in traditional teaware or a press pot (120-200 ml) suitable for 7 rounds in average.
Alternatively, infuse 4g for 2 minute in a large pot (500-750 ml).
