Si Pai Shan Spring 2022 from our beloved town of Mengku in west Yunnan province, China. Early spring harvest, picked in Shoumei standard (open bud and 2-3 leaves), undergoes withering and gentle drying similar to Moonlight White. Tea grown naturally, pesticide-free (uncertified organic tea) in a sustainable environment.


Bold deep taste, slightly dark due to rapid drying processing. Si pai shan has great texture and body with slight astrigent finish, and clear notes.


This small white tea cake serves as a great entry-level gateway to the world of white teas overall, and compressed teas in particular, and in a very affordable price. A daily white tea with long shelf life and potential for slow aging (see instructions).

    5g, 120-200 ml, 95-100°c, 7-14 sec, 7-10 infusions


    Leaf to Water Ratio:

    3.5g : 100ml, 95-100°c, 8-20 sec, 5-7 infusions

     

    Western Brew:

    Infuse 2-3 grams of leaves in a large pot 250-500 ml for 1-2 minutes. Infuse twice.
