Ming Feng Shan white tea cake from the Yongde town in western Yunnan Province, China. Harvested in early spring 2021, at the beginning of April, from a small leaf local variety, but still "big leaf" species (we know, it's confusing), in a picking standard of 1 bud 2 leaves. Tea trees known as "Da Shu" 大树 are 50-70 years old, grown in an ecologically sustainable agricultural environment, without the use of pesticides or fertilizers.
Ming Feng Shan is considered the highest mountain in China where white tea is grown, and indeed it is an exceptionally unique material, even rare in its nature. Pay attention to the precise measurement of the elevation from which the tea comes: 1979 to 2006 meters above sea level. Our choice of relatively young trees allowed us to bring such a prestigious material at a reasonable price for everyone. The leaves, naturally dried in and out door - sun and shade - without the use of machinery, preserve the energies and complexity of the tea, which continues to evolve and improve slowly but steadily. That's also why we waited patiently for over 3 years before starting to sell it. Over the years, we have sampled the tea and followed its development through aging, adjusting our storage conditions accordingly. Recently, the tea began to show signs of maturity despite the youthfulness still present, prompting us to allow the sale of individual tong to those who wish to continue aging the tea or start enjoying it now.
A medium to full-bodied white tea with a complex flavor profile that continues to evolve from season to season depending on its storage conditions. Floral aroma of jasmine and roses, with a crinkled texture and a sweet, grassy finish. A different white tea of rare material, even in Chinese terms, suitable for advanced drinkers for further aging and enhancement under suitable conditions (see storage guidelines).
