Experimental white tea from Mingjian town in Southwest Nantou County, Taiwan. Organic tea leaves grown in sustainable natural conditions without pesticides or fertilization. Winter to very early spring 2023 harvest started in December 2022. Since the leaves were picked that early, before the Chinese New Year 2023 (Spring Festival), it is traditionally considered a 2022 Year of the Tiger harvest, rather than by the Gregorian calendar. Tea characterized with floral aroma, medium body, and a complex flavor profile with hints of apple, producing a bright and clear beverage.
The leaves were shaken and tossed during a short oxidation process, much like wulong tea, which is why we call it "shake" white tea. The leaves were machine-rolled for about 20 minutes at various speeds and then heated in an oven between 70-85°C. The harvesting and leaf processing were done through trial and error with different batches, resulting in a dynamic range of parameters.
This experiment was conducted by one of Master Chen's colleagues, who have heard from his old friend about a couple overseas looking for local hybrid tea experiments for their tea club. Therefore, when Pink visited Taiwan in the fall of 2023, the master asked her to taste his latest creation. A few days later, we purchased the entire stock of his rare tea.
Eventually, due to the limited stock, the tea did not make it to our blind tasting club but is now available for sale. White tea enthusiasts and hybrid tea lovers must get their hands on this find. A tea ahead of its time, alongside hybrid white tea genres that have already started to take shape in Fujian Province, China, with versions like charcoal-baked white tea and post-fermented shou white tea.
A multi-season and slightly aged tea, suitable for drinking at any time of the day throughout the year.
