Tailao Shan 太姥山 Qing Shoumei White Tea, from the core of the homeland of white tea in Fuding, Fujian Province, China. Late first spring harvest known as Shoumei (1 bud and 2-3 leaves), in late April 2023. A clear beverage with a delicate, smooth umami finish and a wide flavor spectrum that changes with time. Flavors identified by members of our blind tasting club include coconut, grass, squash, and snow peas.
A blend of two main varieties in Fuding: Da Bai 大白 and Da Hao 大毫. Both varieties grow on small trees (Chao Mu 喬木) but have different leaves characteristic; Da Bai has medium-sized, oval leaves, and its buds are thick. Da Hao has large, pointed tips, and its yield is limited.
We classified this tea as Qing 青 (greenish), because unlike most Shoumei available in the market - which have a dark appearance - this version underwent a patient and controlled natural drying process for up to 60 hours at a temperature range of 28-35°C, without using a dryer. The result is leaves with a greener appearance and properties - higher chlorophyll content, and longer aging potential.
This is actually the more traditional and challenging approach to producing white tea. Over the years, the leaves will oxidize and darken, thus aging naturally and optimally into a tea with a different chemical profile and value. For those who want to experiment with aging by themselves, we recommend purchasing several bags and sampling one each year to observe the tea's development. This is a great tea at an affordable price for the task. The stock is very limited.

Gong fu:
5g, 120-200 ml, 85-95°c, 8-20 sec, 7-10 infusions
Leaf to Water Ratio:
3.5g : 100ml, 85-95°c, 7-15 sec, 6-7 infusions
Western Brew:
Infuse 2 grams of leaves in a large pot 250-500 ml for about 2 minutes.

Storage
Long shelf life, the aged the better. Suitable for aging by storing in the original packaging, in a shady place with neutral odor. Avoid storage alongside spices, perfumes and other types of tea.
