The craftsmanship of Master Chen, one of the greatest experts in Taiwan for growing Ye Fang 野放茶 Ye Fang Cha - sustainable cultivation without human intervention - no watering, fertilizing or pesticides have been used (beyond organic). "Withering is the key" says Master Chen, who combines long withering - a technique borrowed from Eastern Beauty - followed by slow and controlled fermentation in vacuum, without additives. Finally, the leaves were baked (hong bei 玸焙) in a procedure that takes 4 days in total.


GABA acid (Gamma-Aminobutyric Acid) GABA is a neurotransmitter found naturally in the human brain. In tea, the GABA content is increased using a unique processing method called nitrogen fixation that was invented in Japan in the 1980s. Instead of exposing the tea leaves to oxygen during fermentation, they are kept in a nitrogen-rich environment. This lack of oxygen causes the tea leaves to increase GABA levels. While scientific studies on the health benefits of GABA tea are ongoing, some suggest that increased GABA levels could potentially promote relaxation and reduce anxiety. The profile of gaba tea is characterized by a refined and unique sweetness.
