Sometimes, when you look hard enough you find treasures.
Spring Harvest 2014 vintage, Aged 10 Years, Wild Tea from Li Shan Mountain, South Heping County, Western Taiwan. Li Shan 梨山, one of Taiwan's highest and most famous mountains, has gained a reputation for fresh, clear, and especially green Gao Shan Wulong 高山烏龍, but also for being heavily sprayed in commercial agriculture. However, this is irrelevant to the treasure we found in a limited stock from one of the most renowned masters in the area, with over 40 years of experience. A sustainable, pesticide-free wild harvest, carefully aged for a decade, with a unique flavor profile. One of the most fascinating lessons we've learned about aging tea.
Small leaves from the Qing Xin Oolong variety underwent heavy oxidation using the Eastern Beauty method, and hand-rolled without the typical folding finish used in the industry. The tea was never roasted. This tea has a rare profile as it went through a creative and unconventional process in the Taiwanese tea landscape, boasting a full body and a perfect balance between fruity jam flavors and an aged character. The tea was aged in a metal container under dry conditions until it was packed.
A ceremonial high-end tea packed in a 7 gram bag suitable for one or two servings. It is recommended to brew using the Gong Fu method to enjoy its development from one infusion to the next.
