A hand-picked, strict grade of one of the greatest culinary hits of our time โ Original Korean Yuzu. A natural and organic citrus infusion that contains 100% dried yuzu peel, designated for brewing a caffeine-free herbal tea, without the need of sweeteners or additives. A winter pluck which takes place once a year from November to February, on the hills adjacent to the shores of Jeju Island, at a height of 200-600m above sea level. Much like with our Buckwheat tea, due to the competition between a limited number of Original Yuzu Tea growers, the grower wonโt tell us his production methods, such as temperature, moisture level and the duration of drying, but we forgive him because this tea is simply perfect. Yuzu is a cultivated citrus from Tang dynasty era in Hubei province, at the center of China โ from which it arrived to Korea around 1,300 years ago and became a local cultural symbol. It is a breed of 2 Chinese citrus varieties: Sour Mandarin (้ ธๆ suan gan) and Ichang Papeda, which is similar to Bitter Orange. Yuzu has a thicker peel compared to other citrus fruit, and its flavors are rich. The yuzu peel is a culinary wonder, being able to keep an exceptional balance between sweetness, sourness, and spiciness โ all in one ingredient. Some will experience a similar effect to that of the timeless Indian formula: ginger-lemon-honey.

Instructions
Infuse half a teaspoon of yuzu (2g) in hot water 90-100ยฐc for about 2-3 minutes in a pitcher or directly into a cup (200-500 ml)
